RISE Agriculture and Food is looking for a highly motivated student with an interest in fermentation processes and chemistry.

Research area
At RISE, as a part of the innovation centre FINEST, we are working for accelerating the innovation and restructuring the Swedish food system. FINEST is a centre consisting of researchers from RISE, Chalmers University and Technology, and Uppsala University as well as 15 Swedish industries. 

One of our goal is to transform the Swedish forest berry value chain by developing unique food based on berries, which are healthy and sustainable. 

Project description
In this Master thesis project, you will work on developing a fermented beverage based on bilberries starting from the extraction of the juice, and you will perform the chemical characterization of the product throughout the process. Your task will be to design the right fermentation process based on the properties of the initial raw material and with the goal to yield a high quality and nutritious beverage.   

Throughout the project you will learn about enzymes, how to screen the fermentation starter cultures and optimize a fermentation process, how to quantify specific compounds, how to design and perform experiments in a food grade environment.

You will be supported by a multidisciplinary team of scientists, which are experts in fermentation and berry juice processes, and chemical analysis.

The work will be performed on a laboratory scale and in a food grade environment. You will work in the Product Design Unit at RISE Bioeconomy and health, Department of Agriculture and Food. The institute is in Frans Perssons väg 6, Göteborg.

The ideal candidate for this master thesis project has a background in Microbiology, Biotechnology, Food Science, or Chemistry.

Starting month: September 2021.
